Global flavor trends 2025

Flavor, beyond being a sensory characteristic, plays an important role in the food industry, influencing aspects such as consumer pleasure and well-being.

So, now that we are well into 2025, we can look at the flavor trends that will mark the coming months.

5 GLOBAL FLAVOR TRENDS

#1 COMFORT AND EMOTIONAL WELL-BEING

In a world where stress, anxiety, insomnia and fatigue affect a growing number of consumers, food and beverages have become allies in improving emotional well-being. According to recent data, 28% of consumers globally consider "improving mood" to be the most important aspect they look for in flavors. This highlights the role of food, not only as a source of nutrition, but also as a tool to generate comfort and well-being.

What flavors do consumers prefer according to their mood?

When it comes to finding comfort and warmth in flavors, preferences tend to lean toward options that convey familiarity and tranquility. Among the favorites, we find:

Preferred flavors to generate comfort:

Warm and comforting notes such as caramel, chocolate, vanilla or nuts. These options generate a sense of emotional warmth and are perfect for combating stress.
Also coffee, with its enveloping aroma and its ability to evoke moments of calm and connection, is a classic that inspires both energy and comfort.

Ideal textures to enhance comfort:

  • Smooth textures, such as yogurt, cream or dairy products.

Natural, fresh and light liquids that provide freshness.

#2 AUTHENTIC FLAVORS

Authentic flavors have a special power: they are capable of teleporting us back to our childhood and awakening emotionally charged memories. These taste notes, found in tradition, are a bridge between the past and the present, reminding us of significant moments in our lives.

Today, nearly 1 in 2 consumers worldwide say that traditions, such as choosing foods that express their cultural heritage, are a very or extremely important value in their diet. This interest in connecting with roots has driven an active search for old recipes and classic flavors, which evoke feelings of nostalgia and authenticity.

Nostalgia as a trend

64% of consumers worldwide express a desire to see more traditional and authentic recipes on supermarket shelves. This is not only an emotional need, but also a reconnection.

In addition, the introduction of ethnic and traditional flavors in innovative products is setting a clear trend.

Brand: Lay's

It has launched special editions of flavors such as Tzatziki (inspired by Greece), Masala (from India) and Honey Butter (popular in Korea).

Flavors that last over time

Timeless, tradition-based flavors stand out not only for their ability to evoke nostalgia, but also for their adaptability to new formats and products. With an average annual growth of 8% in foods and beverages with these flavors, brands are betting on capturing the essence of these traditions and bringing them to the consumer's table in an accessible and creative way.

Brand: M&M's

Celebrate the change of season with its limited edition Pumpkin Pie Milk Chocolate, a perfect choice for autumn days.

#3 TASTE ADVENTURES

One of the main drivers of this sector, apart from nostalgia, is the discovery of new flavors to increase the enjoyment and pleasure of food. A recent example of this trend is the drink created by singer Dua Lipa, which combines Diet Coke with pickle juice and jalapenos.

The swicy trend has shown impressive growth in global interest, especially in the first half of 2024, standing out as a key opportunity for flavor innovation within the food sector. Its popularity is likely linked to the desire for novel experiences.

The swicy trend is the union of two antagonistic flavors typical of Korean gastronomy: sweet and spicy. Although today it is a trend, swicy is not something new, but the depth of flavor it generates and the balance between the two opposing flavors has managed to conquer again the western gastronomy.

As we can see in this graph, the swicy trend experienced growth between August 2023 and July 2024. After a moderate start of 12% and a slight drop of 8%, a significant increase (34%) was observed between February and April, driven by key launches and big brand campaigns. Finally, it reached its peak (46%) between May and July, consolidating its position as a leading preference thanks to its integration into products that are accessible and attractive to consumers.

#4 TASTE AND HEALTH HAND IN HAND

In an increasingly health- and wellness-oriented market, consumers are looking for nutritious foods and beverages that meet certain criteria. Among the most important factors when making purchasing decisions are:

Flavor innovation makes healthy offerings more palatable

The development of products such as protein shakes with innovative flavors, such as "caramel popcorn," exemplifies how to combine fun and nutrition. 48% of consumers believe that "light" versions (with less sugar, fat or calories) are healthier than the original. In addition, texture and taste are the second most valued aspect when choosing healthy foods, after price.

This trend is also driving launches such as sugar-free beverages (+15% growth between 2019 and 2024) and non-alcoholic options. Products with creative flavors highlight how commitments to health and sustainability do not sacrifice enjoyment or quality.

#5 ENJOY A HEALTHIER WAY

Today, consumers are not only looking for products that are affordable in price, but also prioritize those that offer exceptional quality and enriching sensory experiences. This combination of quality and enjoyment has redefined the concept of "value for money" in the food and beverage market.

When it comes to evaluating the value of a product, consumers consider attributes beyond price. According to a global study, the most important factors are:

Flavor as a key attribute

Over the past 12 months, taste has become even more important as a primary criterion when purchasing food and beverages. Innovative examples highlight how brands are responding to this trend:

Brand: Nescafé

This coffee combines multilayer flavors, offering a complete sensory experience:

    • First taste: A refreshing floral aroma that activates the palate.
    • Medium flavor: A mouth-filling nutty aroma complemented by a dense and balanced texture.
    • Final taste: A soft touch of caramel that lingers in the throat.
