    Milk protein produced by acid precipitation of milk caseins. It delays the hardening of sticks, thus prolonging their shelf life.

    They need a temperature of 70-80ÂşC for 3-4 minutes for complete gelatinization. They contain 3% protein and 0.5% fat. They allow the replacement of E numbers. They act as thickeners or emulsifiers, generating gel structures or providing creaminess.
